History professor and author Anna D. Jaroszyńska-Kirchmann shares her interesting and colorful new book, Pierogi: An American Story of Polish Food.

Pierogi is an Eastern European delicacy made with dough filled with any of a variety of ingredients and cooked in boiling water. Fillings can be almost anything from cheese to meat to fruit. The finished food is often topped with sour cream or fried onions. Pierogi (as a form of dumpling) probably originated in China but is closely associated with the cuisine of Poland and Ukraine. It came to America starting around the year 1900 during a massive wave of immigrants.

Pierogi takes readers into the kitchens where Polish American families, friends, and community organizations carry on the custom of cooking and eating together.
